Here's a couple pro tips to ensure perfectly baked cupcakes. First, before removing from the oven, take a toothpick and insert in the center of each cupcake. If the toothpick comes out clean, that means they're ready to come out of the oven. Next, make a simple syrup with equal parts of sugar water and perhaps a flavor such as lemon and gently brush it on the top of each cupcake.
